Finely dice 3 spring onions, 1 small peeled carrot and
1 mushroom.
Bring to the boil 200ml vegetable stock in the base of
a 2 tier steamer. Add the above veg, 1 tbsp marjoram and a pinch of salt. Boil
for 1 minute.
Stir and add 3 tbsp wild rice and 1 tbsp each of red
and green lentils. Boil 1 minute, stirring.
In the second layer of the steamer add 3 uncooked frozen
jumbo prawns.
Add the lid and lower the temperature to low / medium
and cook for 20 minutes.
Rinse a handful of spinach, towel dry and arrange on
your serving plate. Add a sprinkling of olive oil.
The rice should have absorbed the liquid but sieve if
necessary. Place on top of the spinach, sprinkle with dark soy sauce. Add the
steamed jumbo prawns and a few rinsed and dried rocket leaves to serve.
