Tamarind Beef

Tamarind has a sweet and sour flavouring. Grating the veg makes this meal a doddle for ease and quick to make. I used a processor with medium grating attachment but you can easily use a standard hand grater.

Prepare per person:

Peel, top and tail then dice 1 small red onion

1 peeled 1” round of sweet potato and turnip

Grate all of these -

1 topped, tailed, peeled carrot

1 topped, tailed, peeled parsnip

4 garlic cloves

1” piece of fresh ginger

Method:

On high hob heat 1 tbsp rapeseed oil in a deep pan and turn the diced onion in it for 1 minute.

Cut into cubes 1 good quality quarter pounder beefburger per person. Put the cubes into the pan with the onion and stir around for 2 minute browning all sides.   

Add the rest of the ingredients all at once and stir for 2 minutes.

In a small bowl add 1tbsp each of dark and light soy sauce and 1 tbsp tamarind sauce then pour over the cooking veg.

Stir for 1 minute. Turn the heat off, put a lid on top and leave for 1 minute.

I like this served with a portion of my crispy Kale

Tomato chutney

Heat 1tbsp oil in a small pan, add half a chopped shallot, 2 medium chopped tomatoes & 1 crushed garlic clove, cook about 6 mins until softened. Add 1tbsp balsamic vinegar & 1tsp brown sugar & cook 5 mins more or until chutney has caramelised slightly. Serve with -

Sausage meatball pasta

In a bowl mix (per person) 1 lightly beaten egg, a dash of tabasco sauce, 30g grated parmesan and 1 tbsp fresh chopped parsley.

Put ribbon pasta (handful per person) into a large saucepan with 1 flat mushroom and add 300ml boiling water and add a pinch of salt, bring back up to the boil and continue cooking on a low/med heat for 12 minutes.

(Per person) Meantime. snip the ends of 3 sausages and remove the sausage meat then use tablespoons of the sausage meat to roll into small meatballs. Sprinkle freshly ground black pepper onto a plate and roll the meat balls through the pepper to coat them. Hob on med heat 1 tbsp oil in a frying pan and roll meatballs around in the pan as they fry for about 3 - 4 minutes.

Turn the heat completely off and using kitchen tongs add the cooked pasta, the mushroom, the egg mixture along with 2 tbsp water the pasta was boiled in, into the same pan as the meatballs coating well as you turn all.

Serve with a sprinkling of freshly ground black pepper.

Ribeye steak n cranberry left over veg fry

Reserve left over veg from Christmas day. Most will surely have some. I’ve used roasted white potatoes, parsnips, sprouts, carrots, swede and sweet potatoes but any leftover veg will do.

The only thing cooked from scratch is the cranberry red cabbage as follows:

First of all you need to shred a red cabbage (about 450g) quite finely into 1/4 inch shreds, discarding any tough stalky bits. Heat 1tbsp oil in a sauce pan over a medium heat, stir in 1 diced shallot, cook it for 2-3 minutes, then add 2 chopped garlic cloves and continue to cook for another 2-3 minutes. Then turn the heat up to its highest setting and add the cabbage. Using a wooden spoon, keep the cabbage constantly on the move.

After about 3-4 minutes of cooking, still stirring, sprinkle in one third tsp each of ground cloves, cinnamon and nutmeg, a seasoning of salt and pepper, followed by the 300g rinsed whole cranberries. Then turn the heat down and let it go on cooking for a further 5-10 minutes, stirring it once or twice during that time. Bite a piece to see if it's tender, then when it's ready turn the heat up again, sprinkle in 4 heaped tbsp soft brown sugar and 1.5tbsp red wine vinegar, give it all a few more good stirs.

NOTE: If you're careful not to overcook in the beginning, you can prepare this in advance and just quickly heat it up for serving.

If you are using roasted veg you won’t need additional oil to fry the veg on highest heat in a wide deep pan for 3 minutes, turning occasionally.

Make a well in the centre of the pan and add 1 tbsp groundnut oil then a portion per person of ribeye steak. Leave to fry for 2 minutes, turn over and fry for 2 minutes.  Add portions of the red cabbage / cranberry mix required and leave for 2 minutes.

Serve with all veg and the steak with red cabbage / cranberry mix spooned over the steak.
