Kale crisps

These are great for snacking or used as a topping for any savoury dish like my

Tomato Jasmine Rice with Kale Crisp topping

Preheat the oven to 180 fan / 200 C / 425 F / Gas 6 whilst preparing the kale.

Strip any stray stems from 200g pre chopped kale and wash in a large bowl thoroughly.
Dry thoroughly on kitchen towels. If it is not sufficiently dried it will not crisp well.

NB

Cavolo nero (black kale) will give a slightly better end product but there will be more preparation as this product is usually uncut from the stems. If you choose this kale – strip the stems from the kale and discard and roughly tear the remaining leaves into bite size pieces and wash and dry as previously described.
Click to see this recipe where I have used black kale.

In a bowl mix 1 generous tsp sumac, quarter tsp freshly ground garlic and herb salt with 1 tbsp olive oil.
For an alternative flavour grind quarter tsp flaky salt, half tsp smoked paprika and garlic with chilli salt or other spices to your taste. Put the spices into a large bowl with 1 tbsp olive oil.
Add the dried kale, get both hands in and massage well with the spices and oil.
Spread evenly in a single layer on two sheet baking tins.
Lower the oven heat to 100 fan / 120 C / 275 F / Gas 1. Put the baking tins into the oven for 30 mins turning the trays after 15 minutes.
Turn off the oven and using a metal spatula gently detach the kale from the trays. Check the  seasoning is to your taste and return the trays back into the turned off oven for at least 15 minutes to further crisp before serving as they are or as a topping for savoury dishes.

Spices I have recently tried - cumin and curry powder added to the oil work well.
Check out the benefits of this vegetable described as the new number 1 superfood.

Roasted veg pasta bows

Dice 1 onion, finely chopped 2 sundried tomatoes, grate 2 carrots, peel and dice half a bulb of garlic, dice 4 mushrooms (any variety).

Place in a baking dish and sprinkle over 1 tbsp basil, 1 tbsp olive oil, salt and white pepper. Sprinkle over 2 tsp cornflour and top with 1 can of chopped tomatoes.

Wash half a small butternutsquash, remove seeds and set aside and cut squash into cubes. Place in a separate baking dish with 1 tbsp oil, 1 tsp hot paprika, 1 tsp dried cumin.

Put both baking dishes in a 180 fan oven and bake for 20 minutes. Put the butternutsquash seeds into another dish and sprinkle over 1 tsp paprika and 1 tsp oil. Bake all for another 10 minutes.

The last 15 minutes of this baking time cook a handful of pasta bows in half pint of boiling salted water.

Drain the pasta. Put the sauce into a serving bowl, add the pasta and 1tbsp pesto turn pasta around to coat the bows’ indents. Serve with the roasted  butternusquash cubes top with the seeds.

Mackerel Fillet Layer

Wash a medium butternutsquash, cut into 4 quarters and remove the seeds. Thinly slice the butternutsquash then place as a bottom layer in a deep baking dish. Drizzle oil over it.

Put the butternutsquash seeds into a shallow baking dish, drizzle with oil and a fresh grinding of garlic salt/herb product. Set aside for now.

Thinly slice an onion into rings and layer onto the butternutsquash.

Shred 2 pointed cabbage leaves for the next layer.

Thinly slice half a corgette for the next layer.

Sprinkle on salt and pepper.

Open 2. 125g cans of mackerel fillets in tomato sauce mash into home made tomato ragu/tomato sauce (click for my recipe) or use 2 bought jars. This will be the final layer.

Bake in a preheated oven 180 fan for 30 minutes.

Put the butternutsquash seeds on the bottom of the oven and bake all for another 10 minutes.

Portion into 4 served with 1 tbsp of the butternutsquash seeds as a topping.

Lemon & Rosemary Fried Brown Rice

I like to precook the rice for this dish so I can just quickly fry it up next day. Ensure it is piping hot though when you serve it.

Rinse 6 tbsp wholegrain brown rice in boiling water a couple of times.

Put 1 tsp rapeseed oil into a deep fry pan. Add the rice, 1 tsp lemon juice and few sprigs of rosemary. fresh ground garlic salt and black pepper, 1 diced onion and a handful of egg noodles.

Just cover with enough boiling water or veg stock if you prefer more taste. Bring it back to the boil, cover with a glass lid if possible so you can check the moisture level is okay without removing the lid, then heat to simmer for 50 minutes when the rice will absorb all the liquid and there will be a ‘popping dimpled effect in the rice’.

Rinse the rice again in boiling water.

Allow to cool then either store in the fridge overnight for cooking next day (do not store any longer than one day), or begin cooking the friend rice as follows:

Heat 1 tbsp sesame oil in a deep frying pan over medium heat and press the rice down into the pan. Sprinkle on 1 tsp lemon juice and a dash of white pepper. leave and allow to cook for 3 minutes. Turn the rice over and cook another 3 minutes.

Add 3tbsp frozen gardens peas, 1 tbsp broad beans and cut green beans and a dash of light soy sauce and keep turning the rice for 2 minutes.

Crack 2 eggs into a dish and beat lightly with 1 tsp dried rosemary.

Bring the rice into the centre of the fry pan allowing an empty ring ‘space’ around it so you can pour the beaten eggs evenly around pan circling the rice using your utensil to cook the egg and when beginning to set turn the egg into the rice mixture.

Add a sprinkling of dark soy and 1 tsp runny honey into the centre of the rice to serve.

Savoury Polenta Bake

In a small bowl measure out 2 tsp dried rosemary and 1 tsp dried sage, 1 tsp chilli flakes/salt and pepper.

Oil a deep 10” baking dish.

Prepare the polenta the night before boiling 1.5 pints of water in a kettle and pour it carefully into a deep pan.

Measure 200g of quick cook polenta into a jug and slowly pour into the boiling water around 2 tbsp at a time and use a whisk continuously to combine until all the polenta is in the water. Add the measured spices (above) and keep whisking until smooth and thick like a porridge consistency. Do not overcook but when smooth pour into the prepared oiled baking dish. Even out with a spatula, allow to cool then place in the fridge overnight.

To bake:

Preheat the oven to 200 fan and assemble the bake as follows;

Peel an onion and slice as thinly as you can to make onion rings and evenly put on top of the polenta.

Peel and grate half a garlic bulb and top the onions with it.

Cut a pack of tofu into 4 even square slices and add to the dish.

Open a can of chopped tomatoes and spread over then sprinkle with white pepper. drizzles of balsamic vinegar and 2 tsp runny honey.

Finally top with grated 100g red Leicester cheese.

Bake for 30 minutes.

Serves 4.

Can be portion frozen, defrosted and cooked another day at 180 fan for 20 minutes.
