One pan Ostrich and mushroom orzo

Ostrich is similar to beef but has a more delicate flavour and tender texture. If you don’t fancy ostrich use boneless chicken.
Orzo is an Italian pasta with a thick rice like texture which is very flavoursome. 
Per person:

Season an ostrich steak with ground black pepper

2 spring onions roughly chopped

1 handful of baby spinach finely chopped

4 sliced mushrooms including stalks (just brush of any debris first)

2 peeled and finely chopped garlic cloves

Measure out 60g orzo pasta

Put 1 tbsp tomato puree in a measuring jug and top up and mix in with 100ml water

Let’s cook:

Heat 2tsp oil in a frying pan. and pan fry the steak both sides for 2 minutes each side. Add a knob of butter on top of the steak., remove and set aside

Add the mushrooms, spinach, spring onions, garlic and more black pepper to the pan. Fry for 2 minutes.

Add the orzo pasta then the puree / water mixture, stir in for 10 seconds. Place the ostrich steak in the middle of the pan on top of the orzo mix.

Bring the whole thing to boiling point then lower the heat to simmer for 15 minutes with a lid checking the liquid is absorbed just right. Serve with a sprinkling of white pepper.
