Cheese soufflé using left over mash

This is a great way to use up any leftover root mash but it is so delicious and easy to make I don’t mind making it from scratch.





Serves 2





I used my hand blender with enclosed secure bowl attachment to whip up some fresh breadcrumbs with 1 slice wholemeal bread. You could easily make your own with a grater or use shop bought.





Whip with your hand blender or a whisk 1cup cold mash to break it up. Stir in the breadcrumbs, 1tbsp diced leek, 1 tsp black pepper and 3 drops tabasco sauce. Beat in 2 eggs. 2tbsp whipping cream and 1 cup of grated cheddar cheese or your choice.





Heap the mixture into a 20cm (8”) oval baking dish smoothing the top evenly and bake in the top shelf of a preheated oven 170fan / 190C / 350F for 30 minutes when it should be puffed up and golden.


Serve sprinkled with dried paprika and oregano and dot with shavings of edam cheese. Delicious hot but can also be served cold with a fresh salad.

Pork apple meatballs with quinoa crisped base and roasted bell peppers

Serves 4





Prepare the meatballs:


Blitz the zest from 1 lemon, 1 slice of wholemeal bread, 2 tbsp parmesan, handful of fresh parsley / thyme, half a chopped sweet firm apple and 4 chopped anchovies. Add this to 450g pork mince, salt and pepper and use your hands to combine well into a firm ball. Put in the fridge whilst you prepare the quinoa crisp base and veg.





To make the quinoa crisp base:


Just cover 300g mixed quinoa in a saucepan with boiling water. Add a lid, bring to the boil, lower the heat and simmer for 10 minutes. Turn off the heat and just leave in the pan for now.





In a separate baking dish rinse and deseed 3 bell peppers and cut each into six pieces. Brush with oil.





Make 5 meatballs with the pork mixture. Using you hands shape the meatballs into equal sized balls and in each one make an indent in the middle and push 1tsp of mozzarella cheese into the centre then spread some of the mixture to enclose the cheese in the ball.





Crisp the meatballs in 1 tbsp hot oil both sides just browning them for 2 minutes each side. Place in a baking dish and add 100ml stock (I used the simple stock I made from a previous recipe Chicken and mushroom puff pastry pie; or use a shop bought product). Bake for 20 minutes in the top of a preheated 200C / 180fan oven along with the bell peppers in the middle of the oven. At the same time:





The quinoa will have absorbed all of the water by now. Add 1 egg and mix smoothly then spoon into 4 baking / serving dishes pressing evenly to cover the base and about half inch up the sides of the dish. Bake for 15 minutes in the bottom of the oven. Don’t overbake or it will really crisp up. Before serving it will be crisp on top with a springy texture. Serve with a meatball, peppers and some of the stock.

Chicken and mushroom puff pastry pie

Easy to prepare and cooked in 15 minutes, chicken thighs are inexpensive and tasty. If you want to make this a lower calorie version, steam the veg and chicken thighs for 15 minutes instead of pan frying, and remove the chicken bones before baking.





Serves two.


Prepare:


Skin and bone 300g chicken thighs, remove the bones. Roughly chop two thirds and fine chop one third of the chicken.


Peel half an 1 onion and rinse one quarter of a leek and chop roughly.


Drain a small can of new potatoes and slice into discs.
Measure out 4 tbsp frozen peas into a small bowl.


Grate 3 peeled garlic cloves.


On high hob heat 1 tbsp oil in a large pan. At the same time use another pan and heat on a medium hob with no oil in.


Add the onions and leeks to the pan with the oil in and fry for 1 minute. Add the chicken, fry for 3 minutes. Add the potatoes, peas, garlic and salt / pepper to taste and fry for 2 minutes.


 


Lightly brush 175g mixed mushrooms to remove any debris and rough slice. Put the mushrooms in the pan with no oil and dry fry the mushrooms to a toasted and nutty stage for 4 minutes stirring once in a while. Then add to the chicken mixture pan with 1 tsp dried thyme.




Remove the pan from the heat and stir in 1 tsp red wine vinegar, 1 tsp worcestershire sauce,
75ml water, salt / pepper to taste.


Unpack a 250g block of rolled all butter puff pastry flat on a wooden chopping board (it usually comes in 375g pack but the remainder can be frozen in its flat rolled state).


Add the chicken mixture to a 20cm / 8” round baking dish. Carefully put the puff pastry on top using the back of a spoon to indent and seal the edges. Use a knife to lightly make a criss-cross pattern on the pastry and brush with oil before baking in the bottom of a preheated oven 220C / 200fan / 425F / Gas 7 for 15 minutes or when the pastry is golden and puffed up.

I made an easy stock by just covering the chicken thigh bones with water in a small baking dish for the same length of cooking time and which is just enough stock for my next recipe

Stuffed sweet long pointed peppers with herby feta greens

A healthy and delicious dish. The long sweet pointed red peppers contain slightly more flavour than standard red peppers. Delicious when combined with crumbly, creamy feta, warm cherry tomatoes and herbs.
Per person -


Layer your baking /serving dish as follows:


6 tbsp frozen garden peas / 2 tbsp frozen broad beans / 2 tbsp frozen cut green beans /


1 tsp dried oregano / rosemary & parsley


2 thinly sliced mushrooms / 4 halved cherry tomatoes sprinkled with white pepper / 1 tsp dried oregano / rosemary & parsley


2 baby sweetcorn / 2 sugar snap peas


Drizzle with extra virgin rapeseed oil


Next rinse and cut a long sweet pointed red pepper lengthways, remove the seeds and pith and place cut side up.


Make the stuffing for the peppers:


Blitz together for 10 seconds 1 slice Tomato and rosemary focaccia (or 1 slice other flavoured bread),  2 spring onions, 2oz crumbled feta cheese, 2tbsp basil leaves, 1 garlic clove, 1 tsp sesame oil, 2 cherry tomatoes, 2 anchovies, salt / pepper to taste. Spoon the stuffing mixture evenly along the long peppers.


Halve a few black olives and dot over as a last topping.


Drizzle the whole dish with oil.





Bake in a preheated oven 200C / 180fan / Gas 4 / 350F for 15 minutes.




Serve with 4tbsp fresh pomegranate and squash seeds and shavings of Provolone Dolce cheese.
NB. Provolone Dolce is a semi-hard mild Italian cheese with a delicious flavour I would liken to a creamy edam which can be a substitute if you cannot find this cheese ( I got mine from Lidls).

Stuffed squash with homemade red pesto / Provolone Dolce topping

Provolone Dolce is a semi-hard mild Italian cheese with a delicious flavour I would liken to a creamy edam which can be a substitute if you cannot find this cheese ( I got mine from Lidls).





Serves 2


Prepare:


Tail and rinse 12 brussels sprouts, place in a baking dish. Brush with oil and a sprinkling of dried paprika.





Peel 1 medium white and sweet potato and cut into thick chips (none of those skinny versions please). Peel 1 small white onion. Put both in the same baking dish. Brush with oil and a sprinkling of dried thyme.





Scrub the outside of a medium yellow squash. Cut the knobbly bit from the bottom to allow a ‘sit’ position and half the squash into 2 equal portion sizes through the centre. Remove the squash seeds and pith to leave cavities in the squash.





Put the seeds in a small baking dish in one layer brush with oil and add a sprinkling of dried thyme.





Brush the squash with oil inside and out and place on a baking dish centre uppermost and bake in a preheated oven 200 C / 180 fan / Gas 4 / 350F for 35 minutes. Also put the sprouts and potato baking dishes in the oven.





Put the dish containing the squash seeds in the oven at the last 5 minutes cooking time to roast.





Meantime half a leek, rinse any debris from it and dice. Grate a small carrot and put both into a small saucepan with 1tsp oil. Stir in the saucepan for 1 minute on high heat.





Add 2 tomatoes from a tin of peeled plum tomatoes along with 6tbsp of the tomato juice from the can. Roughly snip the tomatoes with a pair of scissors. Sprinkle with white pepper. Bring to the boil then stir in 4tbsp of mixed quinoa. Lower heat to a simmer and cook with a lid on for 15 minutes (ie to coincide with the completion of the 35 minutes squash bake).





Meantime make the red pesto:


Blitz for 10 seconds (I use 600 watt hand blender over it’s air tight jug fitment):


1 peeled garlic clove. 1tbsp red bell pepper, 2 roughly chopped sundried tomatoes, roughly chopped 2tbsp fresh basil, grated 1tbsp parmesan, 1tbsp pine nuts (or walnuts), half tsp lemon juice, half a chopped red chilli, 1tbsp extra virgin rapeseed oil, pinch / salt pepper.





When the squash has reached 35 minutes cooking time remove it from the oven and fill the cavities with quinoa mixture. Top each with half the red pesto, 1tbsp chopped basil and shavings of Provolone Dolce cheese then return to the oven for another ten minutes before serving with an extra topping of roasted squash seeds which will have remained in the oven until the complete end of the cooking time.

Next day fry up

If you’ve no one to share the above dish with. Store the remainder overnight in the fridge and simply fry the next day.



Cut the squash into 4 steak sized pieces. Use 2 and freeze the other two for future cooking in the same way.



Use med / high heat and 1 tbsp oil in a shallow fry pan. Put the squash in the centre of the pan.



I retained some brussels sprouts and added 2 baby sweetcorn and some sugar snap peas and placed them evenly around the squash.



Leave to fry for 3 minutes, turn everything over and fry another 3 minutes.



Serve including the gnarly bits in the fry pan with squash seeds as a topping.

One pan Ostrich and mushroom orzo

Ostrich is similar to beef but has a more delicate flavour and tender texture. If you don’t fancy ostrich use boneless chicken.
Orzo is an Italian pasta with a thick rice like texture which is very flavoursome. 
Per person:

Season an ostrich steak with ground black pepper

2 spring onions roughly chopped

1 handful of baby spinach finely chopped

4 sliced mushrooms including stalks (just brush of any debris first)

2 peeled and finely chopped garlic cloves

Measure out 60g orzo pasta

Put 1 tbsp tomato puree in a measuring jug and top up and mix in with 100ml water

Let’s cook:

Heat 2tsp oil in a frying pan. and pan fry the steak both sides for 2 minutes each side. Add a knob of butter on top of the steak., remove and set aside

Add the mushrooms, spinach, spring onions, garlic and more black pepper to the pan. Fry for 2 minutes.

Add the orzo pasta then the puree / water mixture, stir in for 10 seconds. Place the ostrich steak in the middle of the pan on top of the orzo mix.

Bring the whole thing to boiling point then lower the heat to simmer for 15 minutes with a lid checking the liquid is absorbed just right. Serve with a sprinkling of white pepper.
