Dice 1 leek, peel and cut 1 small
red onion into rings; peel a shallot and cut into long thin slices; rinse and
long thin slice one quarter of a red bell pepper.
In a large bowl mix together 1tsp each dried spice - garam masala, curry powder,
ginger, spiced paprika, freshly ground black pepper, cumin and sumac.
Add the onions and stir with a spoon to coat. Lightly beat 1 egg and
add, then 4tsp plain flour. Mix and flatten into a round shape. Put the bowl in
the fridge for 5 minutes.
Put a large fry pan over high heat on a hob and drizzle with advocado
oil to coat swirling it around the pan. Add 50g butter and when melted add the
onion cake. Coat the steak with the spices remains in the bowl and pat with plain
flour. Add the steak to the fry pan and leave all for 2 minutes.
Turn hob down to half heat and cook for a further 2 minutes.
Flip both onion cake and steak onto the other side and cook for 2
minutes.
Using kitchen tongs lift the steak and seal all the edges for 20 seconds
each edge.
The steak will be medium cooked, adjust timing for your preference.
Serve on a bed of rinsed spinach leaves.
